Reminiscent of Diana Barry's hilarious experience with "raspberry cordial," this frozen snack is a fun escape from the mundane world.

Ingredients

  • 2 tbsp Raspberry Cordial loose leaf tea
  • 4 cups boiling water
  • 1/3 cup of simple syrup (1 part water to 1 part sugar)
  • 2-4 tbsp fresh lemon juice
  • 6 oz. (1 container) fresh raspberries
  • popsicle molds

Instructions

1) Measure 2 tbsp Raspberry Cordial loose leaf tea

2) Pour 4 cups of boiling water over tea leaves

3) Add 1/3 cup of simple syrup and let steep in fridge for about 20 minutes

4) In the meantime, make some fresh lemon juice with a lemon squeezer

5) Add 2-4 tbsp of lemon juice to the chilled tea and stir

6) Get your popsicle molds ready by placing a few raspberries in each one

7) Pour the cold tea mixture into the molds and freeze for 4+ hours or overnight

8) Enjoy your Raspberry Cordial popsicles!
