Summer is almost upon us and that means it’s the perfect time for family get together’s on those long warm evenings. We have a great delicious recipe for you, from the Avonlea Cookbook, which is full of fun recipes from Anne of Green Gables and Road To Avonlea. It’s perfect for serving at parties or just for a nice family dinner!
Matthew’s Chicken In Cider:
5 lb of roasting Chicken
4-5 tsp. of Butter
1 Cup of Cider or Apple Juice
2 lbs of Tart Apples
Salt and Pepper
- Preheat Oven to 350
- Cut one 5 lb roasting Chicken into portions for serving.
- Brown the Chicken in a Pan, in 4 to 5 tbsp of Butter. Remove Chicken from the Pan, then pour 1 cup of cider or Apple Juice into the Pan and heat.
- Peel, core and slice 2 lbs of tart Apples. In a baking dish, place a layer of Apple Slices. Cover with a layer of Chicken, sprinkle with Salt and Pepper. Repeat with one more layer of Apple and one of Chicken. Season and cover with a layer of Apple.
- Pour heated cider over top of the Chicken and Apples. Cover the dish and bake at 350 for 1 1/2 hours.
- Serve and enjoy!
